Coconut Carrot Cream Soda Zevia Pudding Recipe

Are you looking to add something new, exciting, and different to your list of healthy treats? With the help of my favorite (and only one I drink) soda brand, Zevia, I have just the recipe for you. If you think making pudding with soda sounds impossible, prepare to be amazed.

Maybe amazed is a bit extreme, but either way, this pudding is delicious (confirmed by Avery), and healthy enough to eat for breakfast.

If you’re still confused, she can help again. Just follow her lead and put it to your lips to take a drink. The following burst of healthy deliciousness will take care of the rest. Since her first taste of #TheNewSweet of Zevia, she’s all smiles every time I bust one out.

But hold on just a minute. Technically, you don’t have to drink Zevia, they have plenty of recipes to prove it. And today, I’m adding one more to the mix. It’s one I have never seen anywhere else and am totally happy with how it turned out. I used Cream Soda Zevia to create a creamy vanilla pudding with a healthy dose of carrots and coconut.

You might think it’s difficult to make, but on the contrary; the only hard part is waiting for it to chill. Which, trust me, really is hard!

Coconut Carrot Cream Soda Zevia Pudding

Prep Time: 10 min

Ingredients (Approx. 32 Ounces)

  • 1 ½ cups steamed carrots (about a 1 lb bag of baby carrots)
  • ¼ cup cold water
  • 1.5 Tbsp. Great Lakes Grass-Fed Gelatin
  • 1 Can Zevia Cream Soda
  • ¼ cup shredded unsweetened coconut
  • 2 tsp pure vanilla extract
  • 1 tablespoon cinnamon
  • Dash of sea salt
  • Optional: 5 – 10 drops pure liquid vanilla stevia for extra vanilla sweetness

Instructions

1. With carrots still hot from being steamed, add all ingredients to blender or food processor and blend until carrots are pureed

2. Dissolve gelatin in the cold water

3. With blender/processor running on low, pour in the gelatin and turn up the speed to completely mix it in.

4. Pour into heatproof container and chill in fridge at least 6 hours, preferable overnight.

5. The pudding should be solid, like jello, after sitting. You can eat it like this or use electric or hand beaters to whip it into more of a pudding consistency.

6. Top with extra cinnamon and enjoy your healthy, dairy-free, egg-free, and delicious vanilla pudding!

*Alternatively, you could use a 15 oz can of pumpkin puree, just make sure to heat it before putting in blender so the gelatin will bind once added.

My Top Healthy Summer Resources for the Family

Father’s Day marks the official first day of summer this year. I don’t know about you, but we’re already feeling the heat in Texas and could go for some of that rain we had a few weeks ago.

With summer, comes heat, and a lot of it! Heat can be dangerous to all of us, but detrimental to our little ones. But that doesn’t mean they need to stay indoors sitting in the A/C all through the season. As long as we keep it smart, everyone can have a wonderful, healthy time under the sun.

I’ve gathered a few sites I find interesting and helpful with tips on how to stay safe and healthy this summer and wanted to share them with you. Most of these are geared towards the family, but I added a few not specifically meant for families that are packed with helpful nutrition and activity tips everyone can use.

First off, make sure you know what you’re rubbing all over your family’s skin. Our skin is highly porous and absorbs a lot of what you put on it, and many sunscreens do more harm than good with the amount of toxic chemicals they contain. This may seem like a minute detail to a full grown adult, but for a tiny baby or toddler, everything is much more concentrated and can post a serious threat. Read my post on sunscreen safety here. P.S. I also apologize to my wife in the post since I used to waive off the dangers of sunscreen myself.

A Healthy Cayenne Dill Dip & The Next “Breaking Bad”

Whether sweet or savory, I love having a good dip around. In the savory department, I make an easy and healthy cayenne dill dip that always satisfies my cravings.

Store bought dips and spreads are typically loaded with ingredients you need a dictionary (or Google) to figure out what they are, and they definitely are NOT found in the common kitchen. If more people would just read the ingredients list on things they buy, maybe it would act as a deterrent. Or maybe not, but who wants eat something full of chemicals made in a science lab?

Speaking of labs, I think Going Mom and I found our new “Breaking Bad”; “The Walking Dead”. We’ve heard all good things about it and one of my co-workers (when I worked) let me borrow the first season twice but we never watched a minute.

Ever since finishing the awesomeness that is Breaking Bad last year, we haven’t found a good replacement. We found and quickly went through the first and only season of The Unbreakable Kimmy Schmidt in just 2 weeks, and just watched the first season of The Walking Dead this weekend. Us = hooked.

But that poor horse at the end of the first episode! He was promised a safer place in Atlanta only to be eaten by zombies. That’s beyond a broken promise!

Just like our Breaking Bad experience, watching shows is difficult with a kid. Last year we had to hold Avery and dance around the living room or rock her in her swing as we subjected her to the show. At nighttime, the volume was so low you couldn’t chew snacks without missing what someone said.

Now that Avery is older, we only have nighttime to watch something, and with her resistance to sleep and Kelley falling asleep when nursing her most of the time, things are still difficult.

We are not TV-watching people; we pay $5/month for the basic of basic plans, and hardly, if ever, turn the TV on during the week. Since my wife is the worker bee in the family, I respect her need to sleep, so no Walking Dead marathons are in our future, but we’re gunning for at least one episode per night.

Hope this works out, cliff-hangers drive us crazy!

Anyway, I might talk more about what we see as we encounter Rick fighting his way through zombie land, but for now, how about a spicy recipe?

Hey, nothing like watching quality TV with a good dip and something to dip with, right? Use any raw veggie or even homemade beer bread to dip or spread this on and you’re set.

Healthy Cayenne Dill Dip

Prep Time: 5 Minutes

Ingredients

  • 1/2 cup low fat cottage cheese
  • 1/2 cup Plain, Non-fat Greek yogurt
  • 1 tsp apple cider vinegar
  • 1 ½ T dill
  • 1/2 T cumin
  • 1/2 tsp cayenne
  • 1/2 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder (not the salt!)
  • Pinch of sea salt
  • Ground black pepper to taste

Instructions

Combine all ingredients in a bowl (I used the half empty cottage cheese container so I could just keep everything inside for no cleanup) and mix well. Let flavors marry in the fridge for at least 2 hours. After sitting overnight the flavors only get better.

If you’re wondering, we did exactly nothing for Easter. We usually go to see family like last year, but just kept it low key by staying home and listening to Avery talk to herself instead of take a nap.
